A friend asked me to help her make a pepper jelly. I had never thought about doing it, so I was interested to try. Our first batch was tasty,but runny. Since then, I have perfected the amount of pectin needed to get a good gel and the right amount of Jalapeño heat to give it a perfect medium heat. Not only is this the easiest appetizer when served wih cream cheese and crackers, but you can also put this over chicken or pork in the slow cooker for a fragrant and delicious meal served over rice and veggies.
Ingredients: sugar, apple cider vinegar, green peppers, red peppers, Jalapeño peppers, pectin and dried red peppers.
