Berry Delicious Cheesecake in a Jar

I adapted this recipe from ChinDeep’s Blueberry Cheesecake in a Jar.
6 half-pint, 8 oz canning jars
1 heaping cup of graham cracker crumbs.
3 T brown sugar
1/4 t cinnamon
1/4 t salt
1/4 c melted butter
I pounded a package of graham crackers in a zip top baggie, then poured the other ingredients in and smooshed it together in the baggie. I don’t like to waste dishes…Tamp down about 3 T of the mixture into the bottom of the jars.
(Go on, double it. You know you will want a lil’ extra)
8 oz cream cheese – room temp
1/2 c sugar
1/2 c sour cream
2 T lemon juice
(Optional) 1t lemon or orange zest*
*I say optional because if your topping doesn’t have a citrus note to it, like Raspberry Mocha Liqueur, it might not blend as well with the flavors like Raspberry Lemon would. Just saying.
Use your mixer to combine these. Divide evenly between the jars. I do recommend doubling it to get nice big full jars like the ones I made.
